制作方法 鳜鱼取肉,剖菊花花刀,用调料略腌,拍干淀粉后抖散,入热油炸至定型、外酥内熟,状如珊瑚,炒制酸甜适口的番茄汁或糖醋芡,均匀浇淋其上即成。
Preparation Fillet the mandarin fish and cut it into a delicate chrysanthemum pattern. Add seasonings, dust with dry starch, and gently shake to loosen the cuts. Deep-fry in hot oil until crisp on the outside and tender within, shaped like coral. Prepare a sweet and sour sauce—either tomato-based or made with a classic sugar-and-vinegar glaze—and drizzle it evenly over the fish before serving.
